Warm Apple Juice, Amaretto and Ginger Syrup

I really like the warmth of this cocktail, for a mocktail version remove Amaretto and add some cranberry juice. A star anise can be added to the apple juice when heating up on a low temperature. I crushed a gingernut to coat the rim, an extra ginger flavour and is of course optional. For the apple juice I always use cloudy and non-sweetened juice. There’s plenty of Irish juice makers out there, I like getting some of The Apple Farm Apple Juice from Traas Apple Farm near Cahir, Co.Tipperary or just pick up the Irish made Juice in Aldi.

Ingredients:
1tsp Spiced Ginger syrup
or Ginger Syrup
25ml Amaretto – for non-alcoholic version use Cranberry Juice
80ml Apple Juice
Wedge of Orange

For Glass Rim
Crushed gingernut
Saucer drizzled with ginger syrup or orange juice

Steps:

  1. Slowly heat up apple juice with a star anise, if you have some.
  2. If coating glass rim, crush biscuit in blender or in a bag with a rolling pin.
  3. In a shaker or jug, add the Amaretto and syrup of your choice. Give a mix and add heated apple juice.
  4. Pour cocktail into prepared glass and squeeze orange wedge into cocktail before placing it in.
  5. Enjoy wrapped up in a blanket. Perfect.
